Vodka/Gin Gibson (Martini)
To make a Vodka Gibson (Martini):
Fill Martini Glass with ice, add water, and let chill while you are mixing your Gibson Martini in the mixing tin. In mixing tin with ice, pour 2 oz Vodka and 1/8 oz Dry Vermouth. Shake (or Stir with bar spoon). Pour out ice & water from Martini Glass. Strain contents of mixing tin into the chilled Martini Glass. Garnish with a cocktail onion. Serve.
Bartender's Note: To make a Gin Gibson (Martini), substitute 2 oz Gin for 2 oz Vodka. Since Gin tends to bruise if shaken or stirred, it is best to allow the Gin to chill in the mixing tin for a minute or two while gently swirling the mixing tin in your hand. Then strain into chilled Martini Glass, garnish with cocktail onion and serve.

Old Fashioned
To make an Old Fashioned:
In an empty Rocks Glass, add an Orange Wedge, a Cherry, a dash of Bitters, a bar spoon of Sugar, and a splash of Soda Water. "Muddle" the above ingredients (see bartender's note below). Add ice. Pour 1 oz of Bourbon. Serve.
Bartender's note: "Muddling" is basically mashing the ingredients together ussing a muddle stick. A muddle stick can be purchased separately. However, my preference is to purchase a bar spoon that has a muddle stick on the opposite end.
